What Is Ammonium Bicarbonate?

Ammonium bicarbonate (NH₄HCO₃) is a white crystalline salt that is the product of ammonia and carbon dioxide dissolved in water. A defining property is its complete thermal decomposition at around 60°C into ammonia, carbon dioxide, and water vapour — leaving no residue. This clean, volatile decomposition and its ability to generate three volumes of gas make it a highly effective leavening agent and the basis for numerous technical applications where a residue-free nitrogen and CO₂ source is required.

Baking & Food Industry Leavening

Ammonium bicarbonate is a fast-acting chemical leavening agent traditionally used in flat or thin baked goods such as crackers, cookies, and wafer biscuits where the ammonia gas can escape freely during baking, leaving no taste. Unlike sodium bicarbonate, it does not require an acid ingredient to activate and produces three molecules of gas per formula unit, providing excellent lift in heat-set products. It is an approved food additive (E503) used widely in Asian, European, and South African biscuit and snack manufacturing.

Nitrogen Fertiliser & Agricultural Uses

Ammonium bicarbonate is used as a nitrogen fertiliser in agriculture, primarily in Asian markets, supplying approximately 17.7% nitrogen. Its high solubility and near-neutral pH make it suitable for direct soil application and fertigation in vegetable growing. Its complete decomposition means that any unused material in the soil does not accumulate as salt. Technical grades are used in nitrogen-rich fertiliser blends and as a nitrogen source in specialty agricultural formulations.

Chemical Synthesis & Industrial Applications

In chemical manufacturing, ammonium bicarbonate is used as a precursor to other ammonium salts and as a pH buffer and mild base in various processing applications. It is used in the leather industry for deliming and in cosmetics as a buffering agent. In the plastics industry, it serves as a blowing agent for the production of open-cell foams where residue-free decomposition is required. It is also used in the manufacture of ammonium salts, dyestuffs, and pigments, and in fire extinguisher formulations.
