What is Wheat Gluten?
Wheat gluten (vital wheat gluten) is the natural protein complex isolated from wheat flour by washing away the starch fraction, leaving a concentrated viscoelastic protein network. With a protein content exceeding 75%, it is a highly concentrated plant protein source that also provides unique functional binding properties, making it valuable both as a nutritional ingredient and as a natural binding agent in pelleted and extruded animal feed products.
Role in Animal Nutrition
Wheat gluten is commonly used in dry pet food (kibble) manufacturing where its binding and texturising properties complement its high protein content. In aquaculture, vital wheat gluten improves pellet water stability at lower inclusion rates than other binders, reducing feed dissolution and wastage in water. Its high glutamic acid and proline content makes it a useful ingredient in specific amino acid supplementation strategies. However, its unbalanced amino acid profile (low lysine) requires complementation with other protein sources.
