What Are Mono-Diglycerides?

Mono- and diglycerides are partial glycerol esters of fatty acids, produced by the interesterification or glycerolysis of triglycerides. They are the most widely used food emulsifiers globally, functioning as surfactants that stabilise fat-in-water and water-in-fat emulsions. Distilled monoglycerides (DMG) contain 90%+ monoglyceride content and are approved under E471 in food and feed.
