What is Glucono Delta-Lactone?

Glucono delta-lactone (GDL) is the cyclic ester of gluconic acid, produced by oxidation of glucose. Upon dissolution in water, GDL hydrolyses gradually to gluconic acid, providing a slow and controlled acidification mechanism compared to direct organic acid addition. This gentle pH reduction without immediate acid shock makes GDL valuable in applications where gradual acidification is preferred.
