Ascorbic acid (Vitamin C) is a water-soluble antioxidant vitamin that most animal species can synthesise endogenously, but supplementation provides significant benefits under conditions of physiological stress, rapid growth, disease challenge, or heat load. Feed-grade ascorbic acid is available as pure L-ascorbic acid or in stabilised coated forms (ascorbyl monophosphate, ascorbyl polyphosphate) that resist degradation during feed pelleting and storage.

In aquaculture, vitamin C is a dietary requirement for fish species that cannot synthesise it, being essential for collagen synthesis, bone mineralisation, and immune function. Ascorbic acid also synergises with vitamin E as an antioxidant system in cell membranes.
