What is Sodium Diacetate?

Sodium diacetate (SDA) is a molecular complex of sodium acetate and acetic acid (CH₃COONa·CH₃COOH), available as a free-flowing white crystalline granule that is easy to handle, dust-free, and free of the corrosion and odour problems associated with liquid acetic acid. Upon dissolution, it releases acetic acid and provides antimicrobial and antifungal activity through the undissociated acetic acid fraction in acidic environments. It is one of the most commonly used dry-form acetic acid preservatives in the food and feed industries.
