What is Erythorbic Acid?

Erythorbic acid (D-isoascorbic acid) is a stereoisomer of ascorbic acid (Vitamin C) with similar antioxidant properties but minimal vitamin C activity. As a reducing agent and oxygen scavenger, it prevents lipid oxidation and colour degradation in food and feed ingredients. Because it provides antioxidant protection without contributing significant vitamin C activity, it is used specifically as a technological antioxidant additive rather than a nutritional supplement.
